Serve this veggie-friendly "meat-lovers" classic with a side salad for a delicious meal! This dish is loaded with lean protein and fiber, and much less fat than your "standard" sheppards pie!
Ingredients
- 2 Large potato
- 1/3 cup nonfat or lowfat milk
- 1/3 cup nonfat plain greek yogurt (or nonfat sour cream)
- 1 tablespoon dried rosemary
- 2 teaspoons black pepper
- 2 teaspoons garlic powder
- 1 package ground veggie crumbles (Boca or Gardein)
- 1/2 Large onion, chopped
- 2 Medium carrots, chopped
- 1 cup mushrooms, sliced
- 1 cup green beans
- 1-2 tablespoon water
- 1-2 tablespoon Worcestershire sauce
- 1/4 cup Ketchup
- 1 teaspoon Mrs. Dash
- 1 cup corn
- 1/2 cup shredded cheddar cheese
Directions
Step 1

Pierce potatoes using fork. Place on microwave-safe plate and microwave for 8-10 minutes, turning at least once. |
Step 2

Preheat oven to 400F. While potatoes are microwaving, saute onions and carrots in non-stick skillet until onions are translucent. Add ground veggie crumbles, mushrooms, green beans, water, Mrs. Dash, and 1tsp each garlic powder and black pepper. Add water as needed. When heated through, add ketchup and Worcestershire sauce until well combined. |

When potatoes are finished (should be able to stick fork through easily) place in large bowl and mash. Add in milk, yogurt, and remaining spices. Set aside. |

Spray an 8x8inch square baking dish. Pour vegetable/ground veggie mixture into dish. Layer with all of the corn. Spread mashed potato mix evenly over vegetables. Sprinkle with cheddar cheese and more rosemary if desired. Bake in 400F oven for 20-30 minutes, or until cheese is melted. |
